Turkey Burger & Sweet Potato Bites (20 minute dinner)

Seriously I’m not kidding when I say that these are quick, easy, great as leftovers and delicious. They are filling and have great macros- it’s a win win! 20 minutes? Pfff … that simple huh?? These are my favorite kind of meals!

Turkey Burger

Serves 4

Macros (includes sandwich thin and turkey burger):

288 calories

19g Carbs/ 27g Protein/ 10g Fat / 4g Fiber/ 15g Net Carbs

INGREDIENTS:

1 whole egg

Jennie-O all natural ground turkey (97% lean- 7% fat, no hormones/ steroids)

1 tsp paprika

1 tsp garlic powder

1 tsp sea salt

1 tsp oregano

1 tsp dried parsley

Directions:

  1. Mix all ingredients in a bowl until completely combined. Separate into 4 even sized patties ( I roll mine into 4 separate balls and then flatten out).
  2. Cook all in a large skillet on medium high heat for 7-8 minutes or until well done ( these can also be cooked on a grill
  3. Place and a sandwich thin (I mainly use the brand Sara Lee, in the pictures above I used a whole wheat bagel thin because we had it on hand)
  4. Place whatever condiments you like! I put spinach, hummus, mustard, red onions, and kalamata olives on mine 🙂

Baked Sweet Potato Bites

SERVES 4

MACROS:

45 calories

10g Carbs / 1g Protein

INGREDIENTS:

1 large sweet potato

1 tsp paprika

1 tsp oregano

1 tsp lemon pepper

Directions:

  1. Preheat oven to 425°
  2. Chop sweet potato into bite size cubes. The easiest way I know how to do this (there may be easier ways I don’t know if) is to cut it width wise into round circles and then cut that into fours
  3. Put onto a baking sheet and spray with olive oil and sprinkle on seasoning (I use and organic extra virgin olive spray from Walmart) if you don’t have that, throw the cubed sweet potato into a bowl and mix in 1 tbsp olive oil and seasonings
  4. Bake for 10 min. Flip with spatula and bake for 10 more minutes
