This quick dessert serves two people and honestly tastes like s’mores! It’s one of my favorite things but I wanted an easier way to make it right in my own home when I don’t have time to build a fire and roast some yummy mallows!

1/4 cup + 2 tbsp Honey
2 tbsp water
1/2 tsp Vanilla
1/2 tsp Lemon juice
1 Egg white
1/2 cup dark chocolate chips
1 tbsp unsweetened almond milk
2 1/2 servings graham crackers
In a bowl put in chocolate chips and almond milk and cook in the microwave for 30 seconds. Take out and whisk together until combined into a chocolate creamy mixture. Set aside.
For the marshmallow cream in a bowl use a hand mixer and beat the egg white and lemon juice until soft peaks form. On the stove in a small pot, combine honey and water no whisk. Cook on medium high heat until bubbles form and it expands about 3x its original size. Pour into egg white mixture and add vanilla. Beat with a hand mixture for about 5-7 minutes
In a small ziplock bag with graham crackers use a rolling pin and crush until it becomes a fine texture.
In a short glass layer chocolate (1 spoonful), graham cracker (2 tbsp), and marshmallow cream (1/4 cup) and repeat twice!
